First, I want to apologize for falling off the face of the earth. This year has sent me for a loop. Early this year I was diagnosed with Hashimotos Thyroiditis which I shared here and I dove deep into learning everything I could about the disease and how to best manage it. In February we underwent another IVF procedure in hopes of giving Baby G a partner in crime and "completing" our family. I am ecstatic to share that it worked and we are expecting a little girl in mid-November! The first fourteen weeks of my pregnancy blessed me with severe food aversions and nausea and the new way of eating I had been practicing for Hashimotos went out the window. It basically came down to eat whatever I can stomach or starve to death and I figured the first option was the better of the two. Gluten was front and center and was definitely the star of every meal. Pizza, sandwiches, tortillas, you know....I have an "excuse" so eat whatever I want. Not really the ideal situation. I was exhausted from the first trimester AND I wasn't eating foods that were good for my body and energy. Fast forward to week 20 and the party is now over and to motivate me to "get back on track" and stop my diversions into Georgetown Cupcakes, I have decided to focus on the Whole30 plan as a reset and to encourage me to give veggies their leading role back and kick gluten and the majority of carbs to the curb. (Disclaimer: I am growing a human and I will be listening to my body as I embark on this journey. I am NOT trying to lose weight, just trying to eat better.)
I am already inspired to get back in the kitchen and start cooking and will be focusing on super simple meals that are compliant with the Whole30. I will share my Whole30 journey will you all and will definitely share any tasty creations I come up with in hopes of giving each of you a little inspiration. What do you do to get you back on track?
