Last week was little G's nanny's birthday...he made her blueberry pancakes. I think he may have solidified his spot in her heart. Lesson: If you want to win someone over, make them these super delicious HEALTHY blueberry pancakes...drizzle (not drown) them with a little pure Maple Syrup and get ready to be loved a tiny bit more. Enjoy.
Blueberry Pancakes
Ingredients:
1/2 cup rolled oats
1/4 cup flax seed
1/4 cup wheat germ
1 tsp baking powder
1 tsp cinnamon (optional)
3/4 c egg whites (approximately 6 egg whites)
8 tbsp cottage cheese
1 tbsp avocado oil
1/2-3/4 cup organic blueberries*
coconut oil
maple syrup
Directions:
1. In large bowl, whisk together oats, flax seed, wheat germ, baking powder and cinnamon.
2. Add egg white, cottage cheese and avocado oil. Stir until blended through.
3. Lightly grease griddle with coconut oil and preheat over medium heat.
4. Ladle 1/4 cup batter onto griddle to form a pancake. Place 8-10 blueberries on top of batter and gently press into pancake. Add a few more pancakes to the griddle being sure to space at least 2" apart.
5. Cook for approximately 2 minutes or until bubbles start to break the batters surface.
6. Flip with a spatula and cook another 2 minutes or until cooked through.
7. Remove from griddle, drizzle with maple syrup.
8. Enjoy!
*While blueberries are not on the Dirty Dozen, they are NUMBER 14 so they barely missed the list. With that being said, if you can buy organic blueberries, I definitely recommend it.
