When I tire of eating sweet potato fries, this alternative spin offers a great stand-in and mixes up the flavor.
Ingredients:
3-4 medium sized carrots
2 tbsp avocado oil
salt & pepper to taste
Directions:
1. Preheat oven to 425 degrees.
2. Peel carrots and cut into 3" pieces. Cut each 3" piece in 1/2 lengthwise and then cut each 1/2 in 1/2 resulting in 4 spears.
3. Place carrots in medium bowl and add avocado oil, salt & pepper. Toss to coat.
4. Transfer to roasting pan and spread carrots evenly.
5. Cook for 15 minutes and then stir. Cook for another 5 minutes or until desired doneness.
