Chicken Kabobs
Ingredients:
1 pound chicken, cut into 3/4" cubes
1 tbsp avocado oil
juice of one lemon
2 tbsp spicy Dijon mustard (I like Roland)
1 tbsp honey
1 tsp minced garlic
1 tsp lemon zest
1 tsp dried basil
1/2 tsp sea salt
Directions:
1. In a large bowl, whisk together avocado oil, lemon juice, dijon mustard, honey, minced garlic, lemon zest, basil and salt.
2. Place chicken cubes in bowl and toss to coat with marinade.
3. Cover and refrigerate overnight or at least a few hours. The longer you marinate the chicken, the more flavorful.
4. Prepare kabobs by skewering the cubes of chicken. Be sure to leave enough room on the ends of the skewer to be able to flip them while grilling.
5. Heat grill to high (approx 450°).
6. Place skewers on grill and cook for 5 minutes.
7. Flip skewers and cook an additional 5 minutes or until chicken is cooked through.
8. Enjoy.
