I have a confession...I ate baby G's food. 😳 The other day I made him a mix of mashed banana with ground oatmeal and baked it for 15 minutes and the result was so DELICIOUS I gobbled it up! So, I decided to make another batch and up the nutrients by adding some wheat germ, flaxseed and chia seeds and it was even more delicious than the original. These little bars are a fantastic breakfast or snack, very portable and a cinch to make and the best part...they don't have all the loaded sugar and processed crap you find in your standard snack bar. Winning.
Banana Oat Bars
Ingredients:
2 ripe bananas
3/4 cup rolled oats, ground in blender
1/4 cup flax seed
1/4 cup wheat germ
1 tbsp chia seeds
Directions:
1. Preheat oven to 350°
2. In a large bowl, mash bananas thoroughly and add remainder of ingredients and mix.
3. Line flat baking pan with parchment paper and spoon mixture onto pan.
4. Utilize a spatula to spread evenly and form into large rectangle, you want it about 1/2" thick.
5. Bake at 350° for 15 minutes.
6. Remove from oven and let cool. Cut into 12 bars.
7. Store in fridge for up to 3-4 days.
Note: These would probably freeze well too. I would just wrap individually prior to freezing.
