The last few days in Atlanta have been HOT, HOT, HOT. I don't know about you, but 90+ in early June is a little too soon for me. To cool down after my run today, I busted out the Vitamix and put my mad blending skills to work, the result...a refreshing Blueberry Kale Smoothie chock full of vitamins and healthy goodness.
Blueberry Kale Smoothie
Serves 1
Ingredients:
1/2 cup liquid base (nut milk, coconut water, milk)
1/2 cup filtered water
1/2 cup frozen kale (or 2 handfuls fresh kale)
1 cup fresh blueberries
1/2 cup vanilla greek yogurt (Atlanta peeps, I highly recommend Atlanta Fresh)
1 tbsp chia seeds
2 tbsp hemp seeds
2 dates (pitted)
1/2 tbsp local honey (optional)
1 scoop protein powder (optional)
6-8 ice cubes
Directions:
1. Place all ingredients in blender and blend until smooth.
2. Sit back, relax and sip...preferably in the shade. Enjoy!
Note: Increase or decrease ice cubes until you find the right consistency for you. You can also sub frozen blueberries for the fresh, just be sure to scale back your ice cubes.
