I have been on a crock-pot chicken kick lately. It really helps to have something easy to grab in the fridge that both the baby and I can eat. This past week I used the chicken to whip up some chicken salad in two minutes flat and I have to say...it was pretty darn tasty.
Chicken Salad
Ingredients:
1 cup shredded chicken (I used crock-pot chicken, recipe below)
2 tbsp plain greek yogurt
1/4 cup chopped pecans or walnuts
1/2 cup sliced grapes
sea salt & pepper to taste
Directions:
1. Mix all ingredients in bowl, eat.
Crock-Pot Chicken
Ingredients:
5 organic boneless, skinless chicken breast
1 cup low-sodium chicken broth
sea salt & pepper to taste
Directions:
1. Place chicken breast in crock-pot and season with salt & pepper.
2. Add chicken broth and cook on low for 5 hours or until chicken shreds easily with fork.
3. Enjoy plain or use for your favorite recipes that call for shredded chicken.
