sweet potato
Directions:
1. Preheat oven to 350°.
2. Wash sweet potato.
3. Bake at 350° for 1 hour or until easily pierced with a fork.
4. Cut into one inch slices or enjoy however you desire.
Grilled Asparagus
Ingredients:
1 large bunch asparagus, ends trimmed
avocado oil
salt & pepper to taste
Directions:
1. Preheat grill to 450°.
2. Drizzle asparagus spears with a light layer of avocado oil.
3. Sprinkle with salt & pepper.
4. Grill over high heat 8 minutes, turning occasionally.
Grilled Eggplant
Ingredients:
1 large eggplant, 3/4" slices
avocado oil
salt & pepper to taste
Directions:
1. Preheat grill to 450°.
2. Brush eggplant slices with a light layer of avocado oil.
3. Sprinkle with salt & pepper.
4. Grill over high heat, 5 minutes per side.
Tuna Salad Wrap
Tuna Salad Wrap
Serves 4
Ingredients:
2 jars tuna
1 1/2 tbsp spicy mustard
2 hard-boiled eggs, chopped
salt & pepper to taste
1 avocado, divided
1 cup sprouts, divided
4 whole wheat tortillas
Directions:
1. Combine tuna, mustard, hard-boiled eggs, salt & pepper. Mix together.
2. Heat tortilla on a flat pan over medium heat for 1 minute. Remove from heat. (This helps the tortilla roll without breaking.)
3. Place 1/4 avocado on tortilla and mash. Add 1/4 cups sprouts on top of avocado.
4. Spoon 1/4 of the tuna mixture onto 1 tortilla and roll up.
5. Enjoy!
Note: If you would like your tortilla toasted, heat flat pan over medium-heat and place rolled, filled tortilla on pan. Heat each side 3-5 minutes.
